Cranberry Brine

  • 1 can cranberry juice concentrate
  • 1 can orange juice concentrate
  • 1 orange (quartered)
  • 1 lemon (quartered)
  • 1 c. kosher salt
  • 1 tbsp. dried thyme leaves
  • 4 bay leaves
  • 1 tsp. ground black pepper
  • 1 cinnamon stick
  • 3 whole garlic gloves
  • 1/2 c. brown sugar
  • 1 red onion (quartered)
  • 1 gallon water
  1. Combine all ingredients in a large pot
  2. Submerge meat or poultry in the brine
  3. Refrigerate for 14-16 hours before roasting/cooking
