Cranberry and Cheese Zatays

- 3/4 cup sweetened dried cranberries, finely chopped
- 1 large potato parboiled and mashed
- 1 cup Panela cheese, finely chopped
- 1/2 cup bacon, finely chopped
- 1 egg beaten
- 1/3 onion, finely chopped
- 10 cherry tomatoes
- Breadcrumbs, as needed
- Parsley to taste, finely chopped
- Olive oil, as needed
- Salt and pepper to taste
- Mix bacon with cheese, potato, cranberries, onion, and half the parsley, season; stir in the egg and mix again. To shape the zatays, carefully tip in the bread crumbs until getting a firm consistency, check the seasoning. Grab a portion of the mixture and form a croquette. Split the croquette with a long stick and press with your hand to stick it in. Heat 4 tablespoons oil and fry the zatays until lightly brown. Serve and decorate with cranberries, tomatoes, and fresh lettuce.
