Cranberry Cobbler
The cobbler is best served with warm with a scoop of vanilla ice cream
  • 3 cups fresh or frozen cranberries
  • 3 cups pineapple chunks, drained
  • 1 cup light brown sugar
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 2 cups baking mix
  • 1/2 cup milk
  • 2-3 T sugar
  1. Preheat oven to 350 degrees.
  2. In a 3-quart casserole dish combine cranberries, pineapple, brown sugar, cinnamon and nutmeg.
  3. In a small mixing bowl combine baking mix and milk.
  4. Drop spoonfuls of dough on top of the fruit. Sprinkle with a little sugar.
  5. Bake for 45 minutes or until dough is golden brown.
