Cranberry Corn Muffins
Dreaming of your next Sunday (or any day) morning breakfast? How ’bout a dozen warm cranberry corn muffins.
Ingredients for Cranberry Corn Muffins
  • 1 1/2 cups Flour
  • 1 1/4 cups corn flour
  • 1/2 cup sugar
  • 1 tsp of baking powder
  • A pinch of salt
  • 1 large egg
  • 3.5 oz. dried cranberries
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1 tsp of vanilla extract
  1. Preheat oven to 350 F. Place paper muffin cups into muffin pan. In a large bowl mix flour, corn flour, sugar and baking powder.
  2. In another bowl mix egg, milk, and oil. Pour liquid ingredients over flour mixture, and then add cranberries and vanilla. Mix well and scoop the mixture into muffin cups.
  3. Bake for 15 minutes or unitl muffins are golden and toothpick test passed.
