Witlof, Cranberry, Pear, Rocket, and Parmesan Salad
Delicious salad pairing cranberries, pear and Parmesan cheese

2 heads of witlof leaves, separated
1 bunch of rocket trimmed
1 pear thinly sliced
3 1/2 oz. shaved Parmesan
20g fresh or frozen cranberries
1/2 oz. sugar
2 T balsamic vinegar
1/2 cup olive oil
Mix all the dressing ingredients in a blender until smooth, season with salt and freshly ground black pepper and pass through a fine sieve.
Lightly dress the witlof, rocket, pear and parmesan with the dressing (it might not require it all).Serve in a large bowl.
