Cranberry Peanut Butter Cookies

Ingredients

  • 1 cup peanut butter
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/3 cup brown sugar
  • 2/3 cup almond flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts

Instructions

  • Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  • In a large bowl, combine the peanut butter, eggs, sugar, and brown sugar. Whisk together until well combined.
  • Add the almond flour, baking soda, and salt to the bowl. Stir until all ingredients are well combined.
  • Fold in the cranberries and walnuts.
  • Using a cookie scoop or heaping tablespoon, portion the dough onto the baking sheets. Press down with a fork in a criss cross pattern.
  • Bake the cookies for 10 to 12 minutes at 350 degrees F, until the edges are turning a light golden brown.
  • Let the cookies cool completely on the pan, then enjoy.

Notes

  • The dough will be moist and sticky, this is normal for the recipe.
  • If your fork is getting stuck while pressing down the cookie dough, slide it along the dough rather than lifting straight up.
