Toast oats in a 9 x 13 inch pan at 350 degrees for minutes. Meanwhile, mix together butter or margarine, brown sugar, honey, egg, vanilla and salt in a large bowl. Add toasted oats, dried cranberries and walnuts.
Press firmly into well-greased 15 x 10 inch pan. Bake at 350 degrees Fahrenheit for 20 minutes. Cool, cut into bars. Store in a tightly covered container or wrap each bar in plastic for school lunches.
