Cranberry and Cheese Satays

Cranberry Zatays


  • 3/4 cup sweetened dried cranberries, finely chopped
  • 1 large potato parboiled and mashed
  • 1 cup Panela cheese, finely chopped
  • 1/2 cup bacon, finely chopped
  • 1 egg beaten
  • 1/3 onion, finely chopped
  • 10 cherry tomatoes
  • Breadcrumbs, as needed
  • Parsley to taste, finely chopped
  • Olive oil, as needed
  • Salt and pepper to taste


  • Mix bacon with cheese, potato, cranberries, onion, and half the parsley, season; stir in the egg and mix again. To shape the satays, carefully dip in the bread crumbs until getting a firm consistency, check the seasoning. Grab a portion of the mixture and form a croquette. Split the croquette with a long stick and press with your hand to stick it in. Heat 4 tablespoons oil and fry the satays until lightly brown. Serve and decorate with cranberries, tomatoes, and fresh lettuce.
