Cranberry and Chipotle Sauce Quesadillas



  • Sauce Ingredients
  • 1 onion, chopped
  • ½ cup water
  • ½ cup cranberry sauce
  • ½ cup dried cranberries
  • Pickled chipotle chilies
  • For the Quesadillas
  • 1½ cups cornmeal dough
  • ½ cup flour
  • 4 T oil
  • 1½ cups grated cheese


  • Preparation
  • To prepare the sauce, boil the onion and cranberry jelly in the ½ cup of water, until the onion is cooked and sheer; blend with the chipotle; add the cranberries and serve with the quesadillas. This delicious sauce is a good match for quesadillas, cheese puff pastries or simply with your favorite cheese. The hot touch makes it perfect for the ideal appetizer.
  • Mix the dough with flour and oil until you get a smooth paste; form thin quesadillas and fill them up with cheese; fry them until browned and drain on kitchen paper before serving.
