Cranberry Corn Muffins

Ingredients

  • 1 1/2 cups Flour
  • 1 1/4 cups corn flour
  • 1/2 cup sugar
  • 1 tsp of baking powder
  • A pinch of salt
  • 1 large egg
  • 3.5 oz. dried cranberries
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1 tsp of vanilla extract

Instructions

  • Preheat oven to 350 F. Place paper muffin cups into muffin pan. In a large bowl mix flour, corn flour, sugar and baking powder.
  • In another bowl mix egg, milk, and oil. Pour liquid ingredients over flour mixture, and then add cranberries and vanilla. Mix well and scoop the mixture into muffin cups.
  • Bake for 15 minutes or unitl muffins are golden and toothpick test passed.
