Cranberry Waldorf Salad



  • 2 cups turnips finely sliced
  • 2 stalks of celery with green
  • 1 pear
  • 3 oz. dried cranberries
  • 1 oz. walnuts
  • 1 1/2 lemon
  • 3.5 oz. mayonnaise
  • 3.5 oz. low-fat plain yogurt
  • 1 tsp. honey
  • Salt and pepper to taste


  • Chop walnuts and toast in a small pan without oil. Peel turnip and cut into fine strips. Squeeze juice out of lemons. Mix turnips with 1 Tbsp. lemon juice. Cut pear into quarters, peel, remove core, and cut into pieces. Wash and clean the celery and cut into fine strips including the green. Mix celery with pear, cranberries, and walnuts.
  • Mix mayonnaise with lemon juice, yogurt and honey. Season to taste with salt and pepper. Pour the dressing over the prepared ingredients and gently mix together. Serve immediately.
