Seared Peppered Yellow Fin Tuna with Dried Cranberries, Orange, Chili & Dill

Ingredients

  • 1 lb tuna loin (cut into three long pieces)
  • 1 handful black peppercorns
  • 1 handful Sea salt

Dressing

  • 2 Tbsp Dried cranberries (soaked in hot water, drained, dried and chopped)
  • 1 shallot (finely chopped)
  • 1 red chili (finely chopped, seeds removed)
  • 1 tsp grain mustard
  • 2 Tbsp dill (finely chopped)
  • 1/2 cup olive oil

Salad

  • 1 handful salad greens
  • 2 radishes (julienned)
  • 1/4 fennel (finely sliced)

Instructions

  • Crust the tuna loins in the pepper and season with a little sea salt
  • Sear the loin on both sides for 30 to 40 seconds and then chill in the fridge
  • Thinly slice the tuna and divide it between six plates
  • Add a little salad at the top of each line of tuna
  • Combine dressing ingredients and dress the tuna with it
