Spinach Salad with Cranberries & Feta

Ingredients

  • 1/2 c. dried cranberries
  • 1/2 c. feta
  • 2 Tbsp orange juice
  • 2 tbsp toasted almonds
  • 1 tsp orange zest
  • 8 oz. fresh spinach
  • 1/4 red onion
  • 1/2 c. balsamic vinaigrette

Instructions

  • Whisk together orange juice, zest and balsamic vinaigrette.
  • Start by putting spinach on a plate or bowl.
  • Top with half of the feta.
  • Drizzle with the dressing mixture to taste.
  • Mix well.
  • Add remaining feta.
  • Top with onions, nuts and cranberries to taste.
