Cranberry and Coffee Iced Drink

- 1/2 cup dried cranberries
- 2 cups cranberry juice
- 2/3 cup sugar
- 2 cups espresso (prepared) or regular coffee, very hot and strong
- Soak cranberries into one cup of cranberry juice. Mix half of sugar amount and join together with cranberry juice. Once sugar is dissolved, add cranberries and juice, blend; put into a bowl and freeze. In another bowl, mix the rest of sugar amount with coffee and heat until dissolved, freeze using an extended mold.
- After one hour, check for small crystals around the edge on both mixtures. Using a fork, mix and scratch around the edges and corners in order to evenly distribute crystals.
- Put molds back into the freezer and let sit for another hour. Repeat the same procedure 3 times or more. Cover the molds. Serve putting half of one flavor and half of the other flavor in cups. Decorate with crackers or cookies of your choice.
