Cranberry Peanut Butter Cookies

  • 1- 1/2 cups Almond Flour
  • 1/2 tspn Baking Soda
  • 1/4 tspn Salt
  • 1/2 tspn Cinnamon
  • 2 eggs
  • 1 Cup Peanut Butter
  • 3/4 cup honey
  • 1/2 cup butter, softened
  • 2 eggs
  • 1/2 cup sweetened dried cranberries
  • 1/2 cup chopped walnuts
Directions
  1. In medium mixing bowl, combine flour, baking soda, cinnamon and salt. Set aside.
  2. Cream peanut butter, honey and butter in mixing bowl until well mixed. Add eggs and beat for one minute.
  3. Slowly add the dry ingredients into the peanut butter mixture until well combined.
  4. Add in dried cranberries and walnuts and mix by hand until thoroughly blended.
  5. Drop by spoonfuls onto a lightly greased cookie sheet and bake for 9-11 minutes in a 350° oven or until lightly browned. Keep checking so they don't burn on the bottoms or edges.
  6. Cool completely on a wire rack before putting into a cookie jar or storage.
