Ram Cran Crostini

- 2 cups frozen cranberries
- 1/2 cup Cranberry juice
- 1/2 cup Honey
- 1 teaspoon Salt
- 2.5 cups McIntosh red apple
- 1/4 cup scallions
- 2 tablespoons cilantro
- 2 tablespoons lime juice
- 1/2 cup Sugar
- 1 baguette Italian bread
- 1/4 cup Orange zest
- Preheat oven to 350°
- Place ingredients into food processor and pulse for 10 seconds or until mixture is thick and chunky with no solid cranberries visible. Place mixture into a medium saucepan that is covered and simmer on medium heat until mixture begins to boil.
- While sauce is heating up, wash fresh ingredients and dice the apple into small cubes. Slice the green scallions into thin slices and finely chop cilantro and place into a medium glass bowl. Slice the lime in half and squeeze the juice onto the mixture and mix thoroughly with a wooden spoon.
- Once mixture is boiling, add sugar and mix with a wooden spoon. Reduce to medium/low heat, remove the cover and simmer until the consistency is thick, while stirring occasionally. Once consistency resembles a thick sauce, reduce the temperature again to low and let simmer until ready to use.
- Once sauce is turned to low, slice bread into medium/thin slices and place bread into the oven for 15 minutes or until golden brown.
- Assemble bread by taking 1 slice and placing 1 Tbsp of fruit mixture and drizzling 2 Tbsp of cranberry sauce on top. Add a pinch of orange zest on top to garnish.
