Seared Peppered Yellow Fin Tuna with Dried Cranberries, Orange, Chili & Dill

- 1 lb tuna loin cut into three long pieces
- 1 handful black peppercorns
- 1 handful Sea salt
- Dressing
- 2 Tbsp Dried cranberries soaked in hot water, drained, dried and chopped
- 1 shallot finely chopped
- 1 red chili finely chopped, seeds removed
- 1 tsp grain mustard
- 2 Tbsp dill finely chopped
- 1/2 cup Olive oil
- Salad
- 1 handful salad greens
- 2 radishes julienned
- 1/4 fennel finely sliced
- Crust the tuna loins in the pepper and season with a little sea salt
- Sear the loin on both sides for 30 to 40 seconds and then chill in the fridge
- Thinly slice the tuna and divide it between six plates
- Add a little salad at the top of each line of tuna
- Combine dressing ingredients and dress the tuna with it
