Seared Peppered Yellow Fin Tuna with Dried Cranberries, Orange, Chili & Dill

  • 1 lb tuna loin cut into three long pieces
  • 1 handful black peppercorns
  • 1 handful Sea salt
  • Dressing
  • 2 Tbsp Dried cranberries soaked in hot water, drained, dried and chopped
  • 1 shallot finely chopped
  • 1 red chili finely chopped, seeds removed
  • 1 tsp grain mustard
  • 2 Tbsp dill finely chopped
  • 1/2 cup Olive oil
  • Salad
  • 1 handful salad greens
  • 2 radishes julienned
  • 1/4 fennel finely sliced
  1. Crust the tuna loins in the pepper and season with a little sea salt
  2. Sear the loin on both sides for 30 to 40 seconds and then chill in the fridge
  3. Thinly slice the tuna and divide it between six plates
  4. Add a little salad at the top of each line of tuna
  5. Combine dressing ingredients and dress the tuna with it
